Dragons…GAH! Okay, I’m done.
Griffons are creatures roughly the same size as ponies with no apparent magic outside of standard flying-and-walking-on-clouds stuff; Celestia and Luna would have had no trouble retreating if Gregor went so far as to try to attack them. With the dragon, though, they were facing a much larger creature with greater offensive potential, and leaving without the Crystal Heart would have put the Crystal ponies in danger.
Though why I’m writing this I haven’t a clue; obviously you think ponies are ignorant racist bastards when it comes to dragons, while dragons are noble creatures that long to live in peace if only those brazen ponies would stop disturbing them and stealing their stuff all the time.

Dragons in Western mythos usually don’t talk and aren’t of the same intelligence as the main species.

1: They didn’t know it was part of the hoard and the dragon attacked them afterwards, because that’s what dragons do.
2: Dragons in western mythos are aggressive creatures. The ones in Equestria are the very same. To take the argument that you are making, we would have to say that it was the humans goading the dragons into taking revenge and slaughtering humans.
I didn’t see any compromise or apology in their dealings with the griffons, just a peace offering of eclairs and a bit of psychological warfare, both designed to soften up the griffon leader. And the “often invad[ing] their homes and steal[ing] their stuff” has happened twice, once when the Crystal ponies thought the dragon supposedly living in a mountain was just a legend, and once when a pony village was threatened by a sleeping dragon. Considering such behavior is inconsistent with being so terrified of dragons that they can’t even learn enough about them for one book, I don’t see how you conclude that it’s something that happens repeatedly, much less “often”.
Where was the attempt to do with the dragon what they did with the griffons? You know, compromise? Or an apology? You know, treating the dragon as an equal?
Ponies viewed the dragon migration like a bunch of wild animals moving from place to place and often invade their homes and steal their stuff, ex Dragonshy.

Ponies had no respect for what a hoard means to his species. Griffons were complete and total jerks, but Celestia didn’t take them up on that war offer.
I felt I was already quoting too much of the book, but yes, she brought “an air squad of Pegasi”, “a team of griffons”, and a manticore as “a last resort”, one that the dragon “merely scoffed” at as a “pathetic group”. Would you care to quote from the book where it said that ponies constantly steal their shit and treat them like beasts and where he said he would have just given it to them if they weren’t such belligerent and uncaring jerks who were not even actually attempting diplomacy?
Siding with Celestia on this one. While the Crystal ponies did start this whole mess, which doesn’t exactly paint their leadership to be that great, however, given how strong the Umbran are, and the sheer cold of their winters, there wouldn’t be a Crystal Empire without that heart.
The dragon was a grouch, following his greed instincts. It’s just how they are. They’re natural jerks.
You left out the part where Celestia brought an army.
And honestly, the Crystal Ponies were the ones at fault.

Oh, it cared less that they wanted a small piece of its hoard that he really didn’t care about and more that they were entitled little shits who thought they could steal something and then get mad when someone took it back, and then show up with an army but pretend that they’re playing nice.
