^A heavy object placed on his back unstable & not secured requires the effort to both lift & keep it balanced making the cake feel heavier than it normally is.  
And as for the love poison:  
I don’t believe the love poison made him stronger just the influence of love itself but the same power can also obtained with the right mental focus but then again Big Mac is no martial artist so he can’t control when he gets THAT strong so ironically my rating goes down to 4 like you suggested :D.

/Applejack outright stated in the beginning of the episode that the cake was very heavy and that it was tiring Big Mac out just having to carry it, even before they started moving it. For comparison, a wedding cake around that size only takes 2 average men to carry around in real life.

Since his other stats are fine and therefore aren’t worth discussing, I’ll just comment on BM’s strength.

>able to pull a 25+ ton house whilst under the influence a love poison, which also endows Cheerilee with freakish strength  
>has difficulty carrying a cake that can’t be heavier then 100 pounds under normal conditions  
Not being able to carry the cake alone would place give him a 2… I guess I’d give him a 4 just to be fair and say the cake was made from dark matter. :P
