Sparkler is not her show name, it’s just the name of a G1 pony (in which Rarity was based on) someone put on her.

And just FYI, Caramel =/= Caramel Apple. Caramel Apple is an actual member of the Apple Family who looks exactly like Carrot Top, but with caramel apples Cutie Mark. And Caramel is the guy with caramel-color coat
