And Applejack was clearly suffering from overexertion and both physical and mental exhaustion (something which I can relate to all too well), so she wasn’t so much crazy as she was just crazy tired.

True, it seems in stressful moments Dash deals with it much better than the others. In TT123 she didn’t lose it completely. At first it made her grumpy and unreasonable followed by her getting depressed. I’m not saying it’s good way to react, but at least it’s harmless
