The words “the defining quality of adamantium is its practical indestructibility” are key here.

She did this with Nightmare Moon’s return. She could have defeated Nightmare Moon, but instead opted to let her sister kill her, in exchange for the safety of her subjects via magically binding contract, thus she didn’t attack the mane 6 directly, but hoped to kill them indirectly to circumvent the spell. Also why she shouted; “stand back, you foals!” so intensely; she was scared they would discover her inability to kill.
 
However, the sisters are magically bound to their heavenly bodies like Horcruxes; thus Nightmare Moon wasn’t truly dead from her fight with Celestia, and was able to return; and thus neither was Celestia truly dead, when she gave her life to Nightmare Moon, but was able to return after Nightmare Moon’s defeat.

The humans want her demise to be seen as an example; their leader fallen like cattle, powerless to stop the new overlords of the pristine utopia of Equestria. The human leaders themselves will oversee the act.
 
Under heavy guard, Celestia is led up onto the stage. The end is near. Reasigned to her fate, Celestia closes her eyes as the human approaches. Soon, all will be dark.
 
Celestia is startled as the cold metal rasps between her eyes. Is this human unaware? HE IS.
 
Her eyes snap open. Fate has delivered a miracle within seconds of the end! For this human is attempting to slaughter her like cattle. He knows not that the brains of equines lie between their ears, not their eyes… and she shall play along. When the trigger releases, she will collapse and the world will believe her dead. The guards will loosen her body to let it fall indignantly to the floor.
 
And when the assembled leaders of the human invasion have turned their backs to present their trophy to the watching world, they will have no idea the power yet untamed behind their feet. And then, in the moment they least expect… Celestia will act. And the assembled leaders of the human invasion will be no more.
 
And she’s going to have one hell of a nosebleed.
