I spoke with Zephyr himself about people hating on Canon x OC, and this is what he had to say:
 
“Yeah it sucks, but you’ll come to realize a lot of people on the internet are just douches, plain and simple. As awesome as this fandom is we definitely have our fair share of trolls/haters/etc that just want to piss people off.
 
You will find your fair share of nice people though, I’m actually kinda surprised how many I found that constantly compliment my art and say how much they love Zephyr and Twilight as a couple.
 
I think the main reason they hate on it though it because OC’s are a character unknown to most people, and if they see “some random” with a character they know and love some people get angry. If they took the time to familiarize themselves with the OC and learn about them I’m sure it wouldn’t be as bad. Some people are also just show elitists and don’t believe anything is as good as/worth being with the show, they are the ones that accuse people of thinking that they’re better than everyone else when they put their character with a show character.
 
Ultimately we’ve got to realize everyone has different opinions, and all we can do is ignore the ass-hats who try to put other down. They don’t seem to care that they’re insulting other living, breathing people, so their comments are worth as much as I value their opinions - nothing.
 
A friend also gave me an amazing quote awhile ago which is completely true  
“We’re all original characters in the world, we should embrace that in others and give not only them a chance, but ourselves the chance to also.”  
Basically every character from the show is just an OC of the artists/story team, and who’s to say that one OC isn’t worthy of being with another?
 
Anyway I probably rambled on a bit too much but that’s because I see this type of stuff far too much, hopefully after this it won’t get to you as much =P

Actually, there can be more than one “waifu”. I’ve got a few buddies who have Trixie, we just see them as separate clones, since we can’t actually “own” her (as Hasbro does).
