If I’m being entirely honest I think the ship actually works the best when it’s ponyXhuman, as it provides some neat dialogue, comedy, and commentary that you can’t really get with a humanized or even hybridized form of AJ.
 
Though my judgement may be clouded/biased a bit due to all the crossover/HiE stuff I’ve read over the years.

My biggest issue on the body type of humanized Applejack with Sanji, I do like the style of Sundown but it really exaggerated to the point of the Amazon on Dragon’s Queen. And I not sure of softening up AJ to be like Nami/Robin/Vivi body type (Ms. Monday is going too far).
 
Another thing: given that they both hate frilly dresses (Sanji’s case, wearing a dress altogether); wondering if AJ would be the aggro here since she sees Sanji as excellent breeding stock (powerful legs, talented cook, cultured enough for fancy people but grounded enough not to be snobbish and can rough house with the best of them) and she doesn’t play coy and be str8 honest with her intentions.
 
I should team up with a writer for this idea. Still stuck with AJ’s body type (human) or to play with ponies as zoan types like Chopper (transform into anthro hybrids).

Add in some comedic angst about the inter-species nature of the relationship and I’d ship it in an instant. Also Zoro jokes about Sanji being so desperate he’d go for a horse.
