Spy is a very meticulous class - blending in, getting past your enemies unnoticed, getting behind enemy lines… it’s very good for Rarity’s more detail-oriented nature. It’s not accents I think make the match - it’s style and grace.

Although, by that logic, Rarity shouldn’t be the Spy, as the only thing linking them together is that they both have European accents. Based on her abilities, she’d have to be a Sniper or Engineer, since re known for meticulous planning, or a front-line combat class, as she’s able to KO Applejack. I think the Demoman offers the best of both worlds here. Careful placement of stickybombs, followed shortly thereafter by equally careful placement of swords.

Pyro is literally the class Pinkie has the least in common with. She’s not even insane, since her bizarre mannerisms are almost always reasonable reactions to hard reality. As people have mentioned, her tendency to build fantastical machines points toward Engineer. The same reasoning could also make her a Medic, though that fits better with Twilight’s mad science tendencies.
 
We’ve seen what she uses for weaponry; she fires a cannon more than once, as in a Loose Cannon Demoman, and she uses Twilight as a minigun, like the Heavy. She also has substance abuse problems like the Demoman and is the fattest member of the team, like the Heavy.
 
Let’s not forget she was actually, canonically a Spy in the season 3 opener.
 
She’s able to keep pace with Rainbow Dash. That probably qualifies her as a Scout.
 
It’s a little harder to make a case for her being a Soldier or Sniper, but these are still more plausible than Pyro. Her quirky, hard-to-understand behavior actually benefits everybody around her, where the Pyro tries to do so but ends up destroying everything ever.
 
Personally, I favor Heavy Pie, Derpyro, and Engie Bloom.

Also, Engineer’s ability to sense his buildings being damaged/sapped could be considered Pinkie Sense.
 
How is Applejack engineer? She has an accent.
 
You have to ask yourself which you prefere - practicality or superficiality. Considering nopony besides the Apple family seems to have an accent, it doesn’t seem unreasonable to ignore Applejack’s.

Pinkie’s energetic, not insane.  
Twilight Sparkle has more bouts of insanity than she does; with more dangerous results even.

But Pinkie is adorable in those goggles.
