That’s not much, but it’s a bit.
Now, let’s look at the change-destiny-spell.
We know that it was designed by Starswirl the Bearded, but never completed.

No, no they were not. What they do changes every time they are used on screen and their origins are unknown, yet no one questions it, but the one spell that has a known origin, a clear, constant cause and effect result, and even uses the EOH, apparently demands an explanation. Yes, it’d be nice to see all that cleared up, but we don’t need to.
The change-destiny-spell requires explanation though, because without explanation the plot collapses in on itself. And the fact that even the writers have no idea, makes this even worse.

It’s one of those things that affect the story in a very significant way and has the added aspect of not being simple enough to just accept as is.
Okay…so where’s the detailed explanation for all the other stuff in the show? Like Pegasus weather manipulation powers? Or unicorn magic? Or where equestria is, if it’s a country or a continent? How big is it? Why can some animals talk and others can’t? Why do farms still exist? How do ponies use objects without opposable digits? How do alicorns work? Where are celestia’s and luna’s parents? Are they the real monarchs or is there a king and queen? What happened to the other draconaques’s? Where do griffons come from? How does the everfree forest work?
With everything in the show pretty much being made simply for the sake of making an interesting subject of talk, even back in season 1, why is it that this is being made to have a higher level of scrutiny than everything else in the show?

The statement refers to something that happened first season, when Word of Faust was still directly applicable. Celestia did give Twilight the dragon egg with no idea why she did it or what would happen when she did, other than because it seemed right to do then. Period.
As the other BP said, it still hasn’t been contradicted by any other canon in newer eps. You can of course believe otherwise, but without it being directly contradicted by newer canon, it’s pure speculation on your part. So you’re inventing drama over a problem that’s all made up in your own head.
Which I’m not complaining about. I love alicorn drama. Just an observation.

According to Word of Faust, Celestia and Luna were the only alicorns in the world, no exception. Then Cadance came along. This, combined with Faust leaving the show, makes Word of Faust dead as a dodo.

I suspect you’re in the minority on that Word of Faust thing, but it’s your right to believe that if you want. As for it being headcanon, so is every other explanation; unless you can show where this one is unreasonable or contradicts actual canon, I see no reason why someone couldn’t believe it.
