Some California rolls have fish in them actually. Like imitation crab, which is made of fish.
To be fair… I was mainly reffering to raw fish. The history of this dish has a few twist and turns. Hints the reason I brought up the rice fermintation process with rice.

Oddly enough…. Sushi originally was not about raw fish. Neither was it about rice per say… Rice was added to slightly cooked fish as a sort of preservative like beer or wine.
The rice cured the fish in a fermentation process. Then the rice was thrown away to leave behind the fermented fish.
Today there are many verations of sushi. Some varations don’t include fish at all. Like the California Roll. Some will have poached vegatables and others will have crab and or shrimp. The primary items being rice and nori. Nori is a type of sea weed dried into paper like sheats.
