Morse code for such a keyboard seems like a good option. Moreover, such a confrontation can give three positions:
0 - if nothing is pressed, it does not count.
1 - button 1 is pressed - let’s say a short signal.
2 - button 2 is pressed - space bar, no signal.
3 - both buttons are pressed - a long signal.
Yes, the same thing can be transmitted with one button - a telegraph key, but it requires a certain skill and probably not very convenient with hooves. Two buttons seem to me a good solution to this problem.
And yet, my favorite is a unicorn behind an ordinary, human keyboard.)

The actual language using a completely different writing system that utilises two simple pictograms that can depict entire sentences depending on the order written.
