While she _*did_* kind of act like the instrument was her whole life, it's far from out of character for Pinkie Pie. Not only does she have an existing fear of her friends not liking her (as brought up in Party Of One & Wondetbolts Academy*), in regards to your point about triggering FS's stage fright, she knows she can be over the top, but that's just her way of showing affection. See the Flawless song or even just how Discord (a very similar character) acts.


 
Sorry for the long [spoiler]||yay[/spoiler]|| sentence, just needed to get my point out there. I feel like people far too rarely give episodes like Yakity-Sax or What About Discord? a fair analysis just because they're uncomfortable on the first watch-through.
