In fairness, Super Mario Sunshine & Galaxy probably wouldn't look much different with a higher polygon count, and I think they kept Super Mario 64 the way it is, because it's low-polygon style has become kinda familiar with it.
The SNES was a different story, because they were trying to push "better" graphics back then, and experiment with them.
