The difference’s still not so glaringly obvious that it might not work at least at first (really, Sour’s just slightly darker).

According to MLP Wiki:
Sour Sweet is pale, light grayish gold.
Fluttershy is Pale, light grayish olive.
not only that but when Fluttershy’s friends realize this fake fluttershy (sour sweet) cannot talk to or understand animals she will be busted
A bit of makeup could cover that up, and some contacts for the eye color
