Huh, here I had been under the assumption that all 4 movies had had the same writer, but no. First two were written by Meghan McCarthy, Friendship Games (my favorite) by Josh Haber, and then Legend of Everfree by Kristine Songs and Joanna Lewis.

To be fair, I’m pretty sure Friendship Games had a different writer than Legend of Everfree.
Alright, you’re right on that part. I had admitedly forgotten that particular line.
I’m perfectly aware. But at the same time, you gotta keep in mind that up until Equestria Girls, there was absolutely no indication that she had any interest in the opposite sex either (same for all main characters sans Rarity, actually), other than assuming she’s straight by default (or as Tumblr likes to call it, heteronormativity). And this jumps of logic kinda leads to having to assume that throughout her whole life not a single relatively handsome stallion has ever been kind to her? ‘cause that seems like a bit of a stretch, even if it is something that’s so far exclusive to headcanon territory (then again, wasn’t Big Mac helping her in some episodes? I seem to recall something but I can’t quite place it).
Bottom line, like I said before, Twilight’s characterization was forced for the sake of this shoehorn romance, whereas Sci-Twi’s reaction to Flash Sentry was way more akin to what I (and I believe many others in the fandom as well) would have expected of her. But just as I thought the writers had finally learned their lesson, lo and behold, Twilight’s characterization gets forced yet again in Legend of Everfree for the sake of another romance that did arguably better than FlashLight in some aspects (more time to interact and get to know each other, for once), yet worse in others (Again, how OLD is Timber? And what’s he doing flirting with a school girl under his charge!?), not to mention that, like others pointed out, you could completely remove this plotline it from the movie and the only thing that would change was that Twilight’s characterization would have been more consistent.
I’ll admit some details might have been added to fill in the gaps, but the general notion of Twilight following in Celestia footsteps by trying to imitate her teaching style was quite evident at the end of “No Second Prances”. In that episode, Twilight literally said, “Princess Celestia gave me room to make my own decisions and my own friends. I need to give you the same freedom.” Given that we already established that she lacks experience in this form of teaching, it should come as no surprise then that she would (most likely unintentionally) take that mantra to the most extreme.
As for why she would “swoon” over Flash but not her friends, there has been no indication whatsoever in the show that she has romantic interest in those of the same sex or otherwise isn’t straight. For that matter, serious romance of any nature involving the mane 6 has never been brought up in the show proper. If anything, Twilight being bisexual or anywhere on the LGBT spectrum is where we actually enter headcanon territory.

By no means I wanna discredit the possibility of well written straight romances. Though admitedly much of them have grown pretty cliched, a good execution is still so nonetheless. To borrow from other shows, there’s Ladybug/Chat Noir (or Marinette/Adrien if you will), who have really nice dynamics and it’s a ship that, thanks to both characters having dual identities, is basically four ships in one. How freaking awesome is that? And then there’s… whatever Disney is doing with Star and Marco in “Star VS The Forces of Evil”, which… hard to say truly where it’s going, but damn if it doesn’t get you invested into it.
But these are shows where the central and potentially romatical relationship between the protagonists was one of the core elements and ideas, unlike Flash or Timber that were arguably forced as love interest into a show that would never welcome them, seeing as MLP rose to popularity by defying stereotypes and cliches. By this very reason, you could even argue these characters are a backstab to the show’s own accomplishments.
Obviously what’s stopping her is Twilight being straight. /joke.
(Though it’s not like hope for non-straight couples should negate the possibility of straight characters or anything.)
That much I get (which only reinforce my complaint that “Friendship Lessons” as Twilight presents them are a ridiculous concept, but that’s arguably another topic), but she was still shown to be sensitive and far more aware of her surroundings than she is around Starlight.
And you know what? That’d be fine, if anything was done out of it. She exhibits this attitude in the Season 6 premire, then again in “No Second Prances”, and again in “Every Little Thing She Does”, and arguably again so in the finale as well (with what little screentime she has early on), but sans her overbearing getting addressed in “No Second Prances”, none of this is acknowlodged as a flaw for Twilight to improve upon. The writing just lets her continue with this nonsense for the sake of Starlight’s development (which is a whole other can of worms in and on itself), never allowing her to grow out of it in the slightest. Even Fluttershy shows more consistent development than this.
Okay, true, but again, you’d expect her to be more mature now, not this level of neurotic that’s arguably her back in Lesson Zero (you know, when this issue was addressed as a flaw)
Uhm… I’m sorry to say, but while this sounds perfectly reasonable and I’d be inclined to agree with it, this is largely your headcanon. A pretty good one, but still so. Now, now, I know that’s pretty much what Spike advices Twilight back in the Season Premire, but again, next time we see her being “the smothering” (which if anything, it shows that she didn’t listen), and then she doesn’t feel like she’s anymore like Celestia, but rather that she’s back at the same oblivious point that she was during the premiere. There’s never any point outright stating that she’s trying to better emulate Celestia between the later episodes, so as reasonable as that can be, you can’t outright state it so as 100% canon.
If shown a little kindness is enough for her to swoon like that, what’s been stopping her from swooning over any of her friends throughout the series? Aside from the fact that despite recent developments, hopes for an LGBT couple getting fulfilled are still small miracles, this again is just a display over how Twilight’s portrayal is nowadays but a toy to the writing.
Now, gathered, through headcanons and reasoning, I’m sure near everything can be justified (or forgiven) by the fans themselves if they’re invested enough. I was more than ready to forgive all of the flaws from the first Equestria Girls movies thanks to how awesome Rainbow Rock and Friendship Games (my personal favorite) had been, but that investment turned sour when I’m faced with the writers making the same mistakes all over again. I seriously don’t get how, after the controversial relationship that FlashLight had when it came around, they go and decide to do this song and dance all over again, with just some tweaks here and there (some which arguably make it WORSE than FlashLight). I at least wanna believe this is what TVTropes would call “Executive Meddling” I believe, meaning the romance side-plot is imposed and the writers just have to deal with it the best they can, but since they may arguably not want to, well, it shows in the poor quality.
A poor quality that we’re sadly sticking with, if the recent clip is anything to go by, and which will taint the characters more and more until it’s finally dropped for good, if it hopefully ever happens.
