If you want, but more likely it was just “I want to draw/paint a winged unicorn skeleton” and they either meant to cover it up later but forgot, or they wanted to see if anyone would notice.
It’s also possible that they found skeletal remains that resembled alicorns, but were incomplete, so the scientific community theorized what the missing parts would look like based on the closest relatives available for whom the appearance/structure of those parts was known (again, like tyrannosaur arms) or other clues (if they found Tempest’s skull, the obvious breakage would tell them that the stump wasn’t her natural state and she once had a full horn).

Or it could be an alternate timeline or distant future where sapient ponies either evolved into rainbow-colored humans (weird as that might be), or the change was made via some sort of magic long since lost.

True, but it’s unlikely to be a photo of the actual ground, given the technical difficulties getting such a shot would involve (among other things), meaning the two complete skeletons shown aren’t necessarily indicative of complete skeletons that have been found. The first Tyrannosaurus rex skeletons were discovered around the turn of the century (1900s), but it took until 1989 for the first complete T. rex arms were found and identified. So even if there’s no errors or intentional artistic embellishment, some of it may still be theoretical.
(Or it could just be an easter egg, but where’s the fun in that?)

That would explain why we never see a human Sunset.
A little, but it’s still a picture in a museum, suggesting that bones like that have been found somewhere in the world at some point.

Being Immortal does not mean that one is invincible. I mean Wolverine is effectively immortal with his regenerative powers but can be killed if blown up hard enough or by decapitation (IIRC anyway) or with a special sword.
