Pegasi: control the weather through passive elemental magic(probably water/air), allowing for optimum crop yield and minimizing dangerous natural disasters  
Unicorns: capable of active magic allowing for the creation of reality bending constructs and spells that serve countless uses  
Earth: have passive nature magic, allowing them to further increase crop yield and quality.  
Alicorns: celestia, due to her immortality, has wisdom of countless millenia, meaning that she is incredibly wise and therefore and optimum ruler as she has countless years of experience  
It all feeds back into eachother in a gigantic symbiosis

It used to basically work like that. A team of unicorn would move the sun but it burnt out their magic permanently after a while and they had to get new ones.

I like to think of this with a WH40K parallel.  
Imagine 100 unicorns dying each day to provide the power for the Corpse-Celestia to do the whole “moving the sun and moon” thing.
