Twilight being special is about more than just magical talent. Starlight didn’t out magic her either, given they fought to a standstill and Twilight wasn’t willing to kill her.
 
In any event, it has more to do with the sheer magical potential she showed when she had her power incontinence. Also Celestia noticed her cutie mark matched the mark on the Tree of Harmony. Really, I don’t think Twilight was ever meant to be able to outright out magic every pony she met, rather she is one of the best at magic and is particularly good at magic related to friendship.

Well it’s actually down to Twilight being used to a ‘one spell to one problem’ motif that’s worked out for her… or hasn’t when the spell’s backfired. She’s a very by the book sort of character, so mixing spells doesn’t come to mind.

I don’t know. I think knowing all the answers is pretty much impossible for anypony. I think part of being smart is being able to use your available resources wisely. I think if someone else has more knowledge than her about a given topic and they’re willing to help, recruiting them is a smart move.
