I know I’m a few years late to the discussion, but it could be that she covers herself because she’s cold, especially in those sensitive areas. Assuming she no longer has fur and what we see is bare skin, just in the same color her coat used to be.

Looking at this image, I have to wonder, what would a horse do if it suddenly had human features the way Moondancer does? Would that horse do as she’s doing and try to cover his or her human parts?

Well she’s not just bipedal. She’s turned anthro by Twi’s spell, as evidence by her hands, posture, torso, hind legs and slightly visible cleavage.
 
Then again, I don’t know why she’d be covering, either. They’re nude all the time.
