Depends on which regional cuisine of China you’re talking about. Traditional Cantonese(the most prominent in the west) Taiwanese and Fujian foods tend to be rather mild tasting and underseasoned. They focus more on freshness and umami flavours. In fact, the reason why many American Chinese foods were overseasoned and fried is because it went better with western palates.

If you like spicy, go with Sichuan, Human, or Guizhou style
