It’s not like it was just the one girl transforming into a mythical creature - another girl turned into a demon and zombified almost the entire student body.

My headcanon around it is that Celestia takes different forms (such as a human) to keep an eye on Twilight, similar to Lucifer/Louis Cypher from Shin Megami Tensei.
