Personally, I’m generally not a fan of shipping, but Rarijack is one of a handful of ships I’m neutral towards. Give it a lighthearted or fanciful twist, as WhiteDiamonds typically does, and I’ll enjoy the pic regardless of my indifference to the subject matter.

It’s not overrated at all. There’s quite an appropriate number of works for the amount of their interactions in the show compared to other ships. No logical reason to say rarijack is overrated when there are some ships that would qualify as “overrated”.

When I realized that Viny and Tavi live together I coudn’t stop laughing for around 2 hours!!!  
Those details make the series better.

V: You thinkin’ what I’m thinkin’, Tavi?  
O: Most certainly, Vinyl.  
V: Suh-weet! I always wanted to try a threesome!  
O: Yes, I…I must admit, I’ve been quite curious about it for some time as well.

This. Plus, 95% of the Rarijack Daily pictures portray the shipping with a light enough touch to be interpreted as friendshipping if one chooses.

I have never looked at an awesome picture of ponies, no matter which ponies, and thought “there are too many awesome pictures of these ponies!”
 
So I can only assume cries of “too much RariJack” are from people who don’t so much want other ponies, but instead want less competition for some other ship they support.
 
And these aren’t even all that shippy. They’re just awesome pictures with Rarity and Applejack in them.
