I like that idea quite a bit.
But as for the mirror thing, it’s not a deal-breaker, but it is a potential source of drama. I can kinda picture Sunset blocking the portal, begging Twilight not to leave because she never comes to see them except when the world’s in danger, so unless there’s another magic emergency, they’ll never see each other again.

Well you know what happened after the last scene with human Twilight.
Human Sunny came down the stairs and said “Twilight, sweetie, your hair’s a mess! Get in the shower so I can make you nice and clean!”

For what? That would be a more frivolous lawsuit than taking someone to court for disagreeing with which combination of condiments someone put on their sandwich.
Suggested context: Twilight has wound up getting closer to Sunset than to the rest of her human friends, because Sunset is the only one who knows what it’s like to be a part of both worlds, and wants Sunset to come back to Equestria with her for a bit.
Sorry, I’m very story-focused, so I always like to see what leads up to situations like this.
