Because despite her apparently ravenous nature, it’s directed at extremely few individuals, all of whom hold positions of prominence and ultimately either fail or reject her (or both).

Opal is actually very picky about who she sinks her claws into. It’s just that her standards are not clear to us. She might share Rarity’s preferences in a lot of things though, which would explain why she puts up with living with her.

At least he gets his in S5E3. Also, Opal is very nice for a crazy lady’s cat. Rarity is a total spaz and seems to handle her pretty roughly, and cats are vindictive and assholes to start. But Opal’s still nicer to Rarity than Angel is to Fluttershy (granted, the bar is low, but still).
Except for Opalescence.
