They call her Princess Mononoke out of fear, and because they don’t know her real name.
 
Its also another way of saying “Demon Child” Since the word Mononoke means demon or spirit.
 
Heres the definition according to Wikipedia:  
Instead of yōkai, sometimes the word mononoke (written 物の怪) is used. It carries the meanings of “monster”, “ghost”, or “spirit”, and the literal meaning is “the spirit of a thing” or “strange thing”.

She’s a princess in some sort of ways. Blueblood’s a prince and he’s not even an ALICORN. Besides, San wasn’t a princess at all, it was more of a title.
