Off topic question:
I’m mexican, so english is not my native language. When I did this edit, which was not supposed to be uploaded, I wondered if it was possible in english to say “How did you gather SUCH THIS amount of crap?” (referring to whatever she’s looking at). I’m pretty sure it’s incorrect, it could be “How did you gather THIS amount of crap?” or “How did you gather such an amount of crap like this?”, but I’m not sure.
Is it incorrect or not natural for native speakers to say “such this” in that context?

“Such this” is grammatically incorrect, so yes it is not natural to say. Adding ‘as’ inbetween to make it “Such as this” is valid on its own, but doing so in the sentence structure of “How did you gather SUCH AS THIS amount of crap?” makes it structurally correct but grammatically awkward.
Your other suggestions of “How did you gather THIS amount of crap?” and “How did you gather such an amount of crap like this?” are both valid and grammatically correct.

I’d point out that “such” already makes “this” unneccessary as it already includes it. “such” means “an amount/quality like this one”.
Alternatively, “so much” can be used to emphasize the amount if you want to play up how much it is. If you want to use the construction in the post, a better phrasing might be “such a large amount” or something similar.
PS: “crap” is not considered vulgar, you don’t need that tag.
“this much” would be much more casual way of putting emphasis on the amount.
