Rarity is African American  
Fluttershy is Caucasian, too(slightly tanner than Applejack)  
Annnd Rainbow Dash is half Puerto Rican/half white

This is close to how I headcanon it, but I see Twilight as latino, Pinkie as interracial, (part native american, part european), and Rarity as european and albino

They’re fictional horses with no ethnicity, having white fur doesn’t mean she needs to have white skin when humanized. Besides, no one complains when people draw the dark colored ponies as white.
