Celestia was shown to much more pink than she is today back when she had to banish Nightmare Moon.
Way to illustrate a legend, whoever illustrated that legend in-universe!
Anyway, people liked the idea of it or found it a good way to convey that their picture took place before Nightmare Moon or Discord, so it still gets used.
