For Their temporary Power-ups:  
Ponies: Releasing their hidden magical potential temporary.( Unless they have unlocked Alicorn form. )  
Griffons: Enter an “berserker” state for short time.  
Dragons: Tranform into an massive dragon form. ( Similar to Tony Chopper’s Monster mode. )  
Changelings: Mimic their opponent’s appearance and special moves.  
Diamond Dogs: Summon pack of the Diamond Dogs to aid in the battle.
 
Imagine Changelings draining opponent’s stamina to refill their health.

Griffons: Very good offense and defense, can fly and have very good stamina regen. Stamina regen is unaffected while wearing armor even while flying. Magicka bar is low and slow to regenerate.  
Dragons: Incredibly high offense, can fly and are magical creatures overall which grants them high magicka bar and regen. Moderate to low defense, and have slow stamina regeneration specially when wearing gear/armor  
Diamond dogs: Heavy defense and good offense with very good stamina regen and can wear all types of equipment. Only race that can dig the earth and travel underground around the map(almost treated the same as flying though underground). Almost no magicka  
Changeling: ????
 
Just my 50 cents. I based my description of dragons having moderate to low stamina, specially when wearing armor to that scene where Ember almost drowned when she was wearing armor.
