I think it has to do with summer solstice, chief day for summer, the sun, and its light.

Otherwise, having Celestia’s day after Nightmare Night would match with the theme of “hope shall rise anew from darkness”.

Perhaps it has to do with Aztecs, one of Mexico’s most famous ancient nations, being sun worshippers.
