Well… yes. Obviously. I hardly think there was some specific in-depth worldbuilding decision involved here.
 
I’m trying to think of an in-universe explanation because I like thinking of in-universe explanations.

AFAIK, banana bread is cooked from the peels.

Did you noticed Celestia tried to use what Luna ate last morning for her pancakes?
 
What kind of banana bread are you eating? The peels are way too fibrous to be good in bread. Typically, overripe bananas are used, but just the flesh.
 
I like Celestia’s scowl at the end.
