There are a nihonjillion varieties of traditional Japanese hairstyles; I could see it being a kind of combination of Taka Shimada bun and Fukiwa Katsuyama that lets the enormous tail of hair hang down in the back.

sounds about right. I like to think of the mane six as about 23-25, so if sunset’s about 3-4 years older than sunset, it would fit.
My headcanon is she is 27/28 in Equestria and 21/22 in the human world. xD
