Here’s some speculation… what Celestia showed Twilight was only a simulation of the Crystal Empire’s past. While trying to think of random Earth Pony foals to throw in, Celestia remembered AppleBloom.

Applebloom escaped from the Crystal Empire a few years earlier than the re-emerging of it. She then had head trauma, had amnesia and was taken under the care of Granny Smith.

Headcanon: Apple Bloom is not related to the Apple family. All crystal ponies are ageless and immortal. Apple Bloom was lucky enough to evade King Donut Steel’s curse.
 
She’s been trying to earn her Cutie Mark for 1000. She STILL doesn’t know that it’s related to carpentry/construction.
