Unlike your standard zombie movie, she very clearly thought this was a temporary condition, she said they needed to keep the cookies away until it “cleared up”, she thought it was an illness. So there’d be no reason to get a fake gun or fake explosives or anything because she thought once they’d stopped eating the cookies for awhile, they’d go back to normal.

That’s the equivalent of someone in a zombie movie carrying around a huge box of brain meat.

Here’s the thing, if Rainbow Dash REALLY wanted to go hard on them, what she should have done was buying a fake gun and fake explosives, and go full Joey Salads when the pony apocalypse happened, so she could scare the everloving shit out of everyone, tricking them into thinking she was considering killing an entire town to prevent a pandemic event. If they get out of character because of the gun presence, they get exposed. If they’re really good at acting, she can just fake a murder and then she’d be taken seriously. If they don’t react at all ,well, they’re probably real zombies.
 
Then the moral of the episode would have been don’t prank a prankster unless you want to wake up with a pole right up the butt.
 
Or, alternatively, he who laughs last laughs best.
 
tl;dr: Pranking the pranksters that pranked the prankster, it’s gone full circle.

True, though I feel what she did was the best course of action, looking at it from an “unknowing” perspective like she had, they don’t look particularly hard to outrun and hide from.

Even it’s just a prank in the end,the situation is “desesperate” either way,if she let them near cookies,the “zombies” eat them and get sicker,if she bring them with her,the zombies follow her

She’s trying to confiscate and hide them from the others.

RD even explained this in the show itself.  
She said she didn’t want the ponies to become even sicker.  
You can see her trying to keep the cookies away from Rarity and AJ in the barn.

Well, Dash wanted to protect them from doing more harm to themselves. She’s the Champion of Equestria after all, so protecting its citizens is kinda her thing to do…
