My headcanon also suggests that FiM Europe would be populated by by various races. Some that may be similar to the ones living in Equestria. The Equestrian Ponies may even had roots in Pony Europe.

King Sombra was actually a World Eaters Devourer that remained loyal to the Emperor and somehow survived The Dropsite Massacre on Isstvan V but, through the trickery of Tzeentch he was cast to Equestria and was transformed to a pony and had all remnants of his past erased, thus explaining why nobody knows of his past and the lack of historical records about him.

When Nightmare Moon fell, her spirit was reborn in the Equestria Girl’s world long before Twilight showed up. Still possessing some magic due to being a god-like figure, she quickly learned the ropes of the new world and wormed her way up into a seat of corporate power. Eventually she sired Sunset Shimmer and groomed her to go into the other world, so Nightmare could eventually conquer Equestria and the Equestria Girl’s world.

Yeah, that makes sense and would give my headcanon some legitimacy in actual canon. Of course the real reason is probably they were lazy about the princesses and just wanted the ‘main’ one to be there but still.
It’s also possible that Luna isn’t told about certain subjects due to Celestia still not fully trusting her.

Something that might be worth mentioning in regards to that is that Celestia seems to be the one actually running the country.
Most visibly, Luna was only briefed on the Crystal Empire shortly before Twilight Sparkle, and was called after Shining Armor and Cadance.
Luna has also only appeared at two official functions. While she doesn’t seem to live in Canterlot, her lack of appearances at official events still seems telling.

I think there’s more tension between Celestia and Luna than what they show us. They’re close, yeah, but I think there’s still a lot of stuff they need to work through to be as comfortable with each other as they were before NMM’s rise and fall.

Yes. Applejack is good at lots of things that aren’t related to apples, even if she isn’t the best at them. Come down to it, she isn’t even the best apple farmer on her farm, so the talent that gives a pony their mark isn’t necessarily what they are the best at.
Heck, Pinkie Pie mostly relies on quantity of attempts when getting people to smile rather than actually being able to understand what makes people smile, but is good at building machines and distressing people with Looney Tunes antics, so her cutie mark doesn’t seem related to her stronger talents.

Cutie Marks usually is a rough display of a pony’s prominent or primary talent. But nothing is stopping them from holding multiple expertise.

Sometimes? Every cutie mark story we’ve seen showed that they got it for their passion rather than a job.
If there’s been a point where anyone was given a job because of their butt picture, then I must have missed it. Rainbow Dash and Pinkie Pie’s marks are both completely unrelated to their actual jobs, so that’s a pretty big proof that employers don’t care what the picture is as long as they can do the job.
Even Cadance’s cute mark seems more related to her ability to spread love than anything else.

That kind of proves my point. The cutie marks there were artificial, and therefore were unrelated to the capabilities and personalities of the ponies. The swapped ponies were all failing badly at their new lives, and were only trying that because of the spell altering their minds. The point of the episode was that following a destiny that was forced upon you is wrong.
The other episode with artificial cutie marks, Cutie Pox did have Apple Bloom get the talents with them, but she didn’t actually get an interest in any of those things. Rather, she was compelled to perform her new talent. Compare that to natural cutie marks, where they only reflect abilities and interests that existed beforehand, and don’t force them to do anything.
We’ve seen the mane six get jobs unrelated to their cutie marks/talents/whatever. They all got a job on Cherry Jubilee’s farm without a problem. There are lots of ponies that don’t seem to have clearly defined cutie marks or talents that directly relate to a job, and they still find work. Plenty of ponies have changed jobs.
I don’t know where the idea that ponies can only get jobs because of a picture on their butt came from, but it isn’t supported by the show.

They only get a given cutie mark because it reflects their interests and personality. They want to take jobs that they like. They take jobs that are related to their cutie marks because their cutie marks are emblematic of what they are interested in.
The ponies decide what form their cutie mark takes. It is a reflection of them. A natural cutie mark exerts no control over them because it is only a symbol of what is already inside them.
Incidentally, I’ve always thought that Cutie Mark Failure Insanity Syndrome was supposed to be a joke. It’s basically the most complicated way to explain something, especially since known cutie marks/talents are rarely directly related to the cause of a breakdown. I’ve never seen any even vaguely compelling reason to think that it’s a reflection of pony psychology.
