Gryphons seem to share the “cloudwalking” ability with pegasi so they probably can manipulate the weather.
Twilight can still write letters and take care of the library.
AJ being a farmer also makes sense. Hell she raises pigs even as a pony.
The only odd one out would be FS since being a carnivore sure screws up her image… then again she did feed the ferrets some fish.
Well, being gryphons, none of their works make sense, especially Twilight.
