I’ve been wanting to design these kiddos since I put out my Soarin x Apple Bumpkin headcanon and I’m absolutely in love with them ^^
Fall Harvest, the oldest triplet of Soarin and Apple Bumpkin, was born deaf from a complicated pregnancy. Wanting to better communicate with his daughter, Soarin took sign language classes and learned to help her speak with her family. Harvest prefers using her wings for sign language, but also carries around a white board and marker when she knows she’ll be in a group who might not know how to understand her. Even though she deals with these challenges, Harvest works hard and enjoys her job, which is organizing harvest schedules for Sweet Apple Acres and the Appleloosa Apple Farm. She learned how to do this from Big Mac, after assisting with a particularly large harvest in Ponyville and ended up receiving her cutie mark because of it. Harvest is very family-oriented and super talkative, especially when she’s excited.
Sunny Skies, the middle child, is a chubby bundle of nerves. Even from childhood, Sunny suffers from prominent generalized anxiety, recurring panic attacks, and sensory overload. He often feels overwhelmed and paranoid, and tends to fidget with his hooves and plucking his feathers (which is similar to us picking at our nails). Because of his anxiety and sensory issues, Sunny struggles with the most simple things, like his hair touching his forehead or his tail rubbing against the back of his legs. He keeps his mane EXTREMELY short and his tail docked, which relieves some of his negative feelings. His family is very supportive of his needs and issues, and helps him in any way they can. Sunny has built up a small collection of comfort objects like weighted pads and blankets, sensory chew necklaces, and soft things like stuffed animals. He works as a weather pony and unlike most pegasi who prefer making storms, rainbows, and strong wind, Sunny loves making fluffy clouds.
Appleberry Jam, who is the youngest of the bunch, is just as rowdy as most Apples. He’s built stronger than both of his older siblings, but uses his strength for jam-making. Jam gained his cutie mark like most of his family do, by trying new activities at a family event. However, he loves making mixed jam from different fruits and sometimes doesn’t use apples at all (BLASPHEMY). His family acts as his taste-testers for new flavors, and it’s pretty common for breakfast to be toast or haycakes slathered in homemade jelly. Appleberry Jam loves playing rough and getting dirty, which Sunny Skies doesn’t understand or want any part of. The two don’t see eye-to-eye when it comes to what they do during the day and sometimes Fall Harvest has to remind Jam to be gentle with their brother, but when it really counts, Jam somehow calms down enough to just be with Sunny in a more overwhelming moment.

Okay but listen I would die for the triplets they’re very close to my heart
If you guys like them and want to see more of the SoarinBumpkin kids, let me know! The more questions you ask, the more into this I can get ^^
