My headcanon: if AJ were to become an alicorn, she’d still act like an earth pony for the most part. I can’t see her ever being comfortable with magic or flight.

its not like Alicorns tend to be masters of all their attributes though from what we’ve seen. Cadence herself says she really isn’t a good flyer, and outside of Twilight’s sonic sparkboom thing at the end of PTS2 (which I still view as the explosion being from her unicorn magic, not the speed she was going at), she hasn’t shown herself to be more than an average flyer.
 
Heck, twilight barely flies in most of the episodes she appears in (compare to how RD is constantly in the air in episodes)

The Tastiest
Applejack will have a harder time than even Twilight, because while Twilight could at least use her magic and Earth pony attributes are mostly passive, AJ has no idea how any of these new things work.

That’s true, like, 90% of the time, but there are a few background ponies where their cutie mark is a scroll of paper or something that doesn’t work well for magic color, so in those cases they use eye color.

From what I see in the show, it’s supposed to be the dominant color of the cutie mark. Like Twilight’s magic is magenta, not purple. Celestia’s is golden, not that pink-ish color of her eyes.
