Thing is, in Ponyville the adults all know Twilight and realize that Princess or not, she’s still basically the same person. The “Princess” bit is just a title.
The kids have a totally different perspective; for them “Princess” is basically synonymous with “Celestia”, who’s more or less universally beloved and revered (fanon aside). When they hear that Twilight is a princess, they immediately think of “beloved honored ruler of Equestria” rather than “Librarian with stress issues”.
That and in general kids have a very skewed view of what constitutes fame anyway.

It was actually kinda nice to have an episode where they were a li’l less “bitchy” then usual. (Fans were calling for their blood after the “Flight to the Finish” ep’.)
It was also priceless to see them kiss-up to the CMC for once.
What I don’t understand is that why the kids care so much and the adults don’t. I mean, the adults were the ones at the coronation and they keep rolling out the red carpet for the other Alicorns, but Twilight can’t even get a cab and a major travel writer doesn’t even bother speaking to her.
