Really? Interesting.
It was in the Diary of the Two Princesses, which while a book rather than a show episode, is more canon than IDW’s comics.

I am admittedly severely out-of-date with the show (haven’t seen anything past Tanks For The Memories), but was that mentioned or confirmed somewhere? Because I recall that being only fan speculation.
Celestia was originally light pink before her alicorn powers fully awakened. That said, Principle Celestia should not have rainbow hair, because that is also a characteristic she picked up with the white coat.
Maybe they couldn’t get their designs to look right with their normal skintones. Looked weird no matter what they did? Idk.
Note that the stock art for the dolls actually depict Applejack with the more orange skin tone (thus closer to her colors as a pony)
If I recall correctly, Celestia is also straight-up white instead of light pink.
But why were they given “realistic” skin tones? Blue ponies are blue humans, and Twilight is a purple one.
But AJ and Big Mac both have realistic skintones, where as Frosty Orange doesn’t. If Cloudchaser had her skin changed, then she’d probably just be given something realistic and not orange.

But have pretty close colors otherwise. Big Mac’s is still a shade of red, for example.
Going from purple to orange is too big a difference. The eye color is also wrong (Cloudchaser’s are lighter)
