I imagine that it’ll be hard to sell Sunset Shimmer as a Princess for the human world since, ya’know, she isn’t the human equivalent of royalty. Sure, Hasbro might try it, but it’ll take some pretty clever writing to convince us that the human world outside of Canterlot High will accept some normal looking teenage girl as their new ruler.

She chose to stay a human, in the friendship games deleted scene it shows sunset and twilight singing instead of just twilight toward the opening and sunset is singing about how she is now liked but she still misses equestria and wonders what her place in the world is. Basically Sunset Shimmer is EXACTLY where Princess Twilight was in the season 4 finale. Sunset is waiting for her answer which is she is most likely going to be the Princess of Friendship for the human world (which is most likely what the rumored 4th movie legends of everfree) is going to be about.
