Even as a Sunset Shimmer fan, I somewhat agree with this. Sure, it’s nice to see her get praised by a lot of fans, but how about other characters?

It’s hard to tell if she’s THE best human for me, but she’s up there!

she is a very well written villain  
granted ATLA is great over all, I felt sorry for her in the end  
she lost everything, began to crack and when she lost that last fight, she just snapped
 
yes the most interesting characters seem to be the redeemed ones, but why?  
it’s probably because they’ve made mistakes and done “bad” things, but found the courage to change and to become a better person
 
the hero rarely struggles as much as those who go through redemption  
sure, he may fall but always triumphs in the end and doesn’t make mistakes if any
 
the redeemed character feels more human than other character tropes because we can relate to their struggle  
which is why Sunset Shimmer is Best human in EqG
