I like N64 enough (heck, I still have one with few games), but it criminally underuses my favourite genre (RPGs), as well as some of the other ones. And the cartridges were a VERY stupid idea for that time. Though the FPSs for it we’re amazing for their time.  
As for the PSX games you asked for…well, here we go ( / means alternate title):  
1)RPGs- there’s really a lot of those: Final Fantasy VII and IX, Chrono Cross, Breath of Fire IV, Valkyrie Profile, Grandia, Wild Arms, Xenogears, Vagrant Story (I’m a bit icky about this one, but people seem to love it), Star Ocean The Second Story, Suikoden II, Tales of Destiny, Tales of Eternia/Tales of Destiny II, Tales of Phantasia (has a translation patch)  
2)platformers- other than what Yoshi said, there’s Tombi/Tomba 1 and 2, Klonoa, Megaman X4 and 5, Ape Escape, Rayman 2( then again, this one was on every possible platform), Jackie Chan Stuntmaster  
3)adventure- well, this one is broad…  
  • for the pure adventure games, The Neverhood and Discworld 1, 2 and Noir are probably the best  
  • for the adventure/platformer mix, MediEvil 1 and 2 are pretty sweet, as is Spiderman  
  • for stealth adventure games, Metal Gear Solid or Tenchu 1 and 2 are your best bet  
  • for survival horror, Resident Evil 2 and 3, Dino Crisis 2, Soul Reaver, Fear Effect 1 and 2, Silent Hill, Shadowman, Parasite Eve 1 and 2(those are mixed with RPGs, but are pretty great either way)  
    4)fighting games- Tekken 3, Soul Blade/Soul Edge, Bloody Roar 2, Street Fighter Alpha 3, Rival Schools, Darkstalkers 3  
    5)not-FPS shooters- Metal Slug X, Omega Boost, Future Cop LAPD, Silent Bomber  
    6)party games- probably nothing will beat good ol’ Friendship Destroyer aka Mario Party, but still: Worms Armageddon, Team Buddies, Crash Bash, Super Puzzle Fighter 2  
    7)strategy- there are some PC ports, but the exclusives are: Front Mission 2 and 3 (2 has a translation patch), Final Fantasy Tactics (got a remake for PSP, which is generally superior, but PSX version is still an option), Tactics Ogre (also got a PSP remake), Vandal Hearts  
    8)racing games- never was much of a fan of those, but still: Crash Team Racing, Wipeout 3, Gran Turismo 2, Ridge Racer Type 4, Driver, Micro Machines V3

Eh, I’ll happily stick with my SNES from the previous console generation instead. :) Me and my family could never really get the hang of using that danged joystick controller for the N64, we much preffered the traditional SNES crosspad control scheme. xD

Perfect Dark is basically Goldeneye BUT EVEN BETTER.
 
There’s the ever present Ocarina Of Time and Majora’s Mask.
 
Star Wars: The Rogue Squadron is pretty cool.
 
Super Smash Brothers, of course.
 
And a bunch of other games. I’ve heard good things about Excitebike 64, for example (but haven’t bought it BECAUSE MONEY)

Theres some really great N64 games, Super Mario 64 is a classic, theres Goldeneye, Star Fox 64 (Also known as Lylat Wars), Donkey Kong 64 Banjo-Kazooie and Banjo-Tooie, Doom 64 (The actual Doom 3) and there are loads of others

The N64…hmm, I never really got that into my N64. The only game I bought and played for it was Super Mario Kart 64 (well technically even that came bundled with the console), and after a year or so of playing that I got bored with the early-polygonal game and went back to enjoying all the Super Nintendo 16-bit games I had instead.  
Illusion of Gaia and Terranigma are still my faves even today. :D

RPGs, platform games, adventure…
 
If anything, the only genres I don’t like are sports games, first person shooters and music games (think guitar hero or ddr).
 
Because I suck at those and I don’t need to be reminded of that.
 
I personally like the N64 better, but since a friend literally gave me his PSX for free (and his game collection but literally like 80% of the discs are so damaged they cannot be read, ever)

Super Mario 64 is awesome tho, I never said the N64 was a bad console, just PS1 is better :3 there is a reason I want to buy a Japanese N64… mostly just because I want an N64 that outputs 60hz but you know… :3
