The Last Roundup: AJ’s very stubborn and full of pride. She PROMISED the town ALL THE MONEY she THOUGHT she was going to win. When she DIDN’T win, she feared that everyone would hate her and treat her like she cheated them - which also implies that she lied, only in this scenario she also turned up zero cash to help the town.
 
She didn’t even lie about having the prize money. She simply said she wasn’t going back to Ponyville and never spoke of the rodeo’s prizes. Nopony knew WHY AJ had abandoned Ponyville until they spilled her saddlebag, thus revealing her secret shame.
 
She did make a Pinkie Promise and break it, but can you really blame her when she thinks the alternative is losing all respect of her peers because she failed them, left City Hall in shambles, AND lost the Rodeo that was supposed to solely help her hometown? She wanted to buy herself more time in the hopes she could earn the money she needed and save her reputation as a dependable pony.
 
 
Party of One: Applejack twisted the truth, and she was HORRIBLE at it even then. She said that Pinkie wasn’t allowed in because everypony was doing lots of renovations, and Rainbow Dash had brought supplies.
 
The renovations was the preparation for the party, and the supplies were party supplies. AJ just censored the parts that would spoil the surprise party, but the rest was true. Not exactly a lie, but not exactly entirely honest either - and it caused AJ so much discomfort to do it that way.
 
 
Pinkie Apple Pie: Once again, AJ’s pride plays a large role in her trying to hide any family squabbles that happen. She wants to be a good host and leave a good impression of the Apple family on Pinkie Pie, if that meant conjuring up half-truths again she was going to at least try.
 
Applebuck Season: AJ solemnly BELIEVED she could handle the entire harvest. She was so certain of it that when Big Mac challenged it her pride and honesty both seemed to be called into question. It is out of stubborness and certainty that she can power through her fatigue that AJ suffers for so long through the episode before turning to outside help.
 
A lot of her ‘lies’ fall under one of two categories: Her believing she’s telling the truth at the time; and her sense of honour and pride making her willing to bend the truth.
 
Calling her a chronic liar is very unfair. She tries to be honest a lot more than she tries to lie. Applejack is honestly hopeless at lying, and because of this trait and rule of funny she is often put into positions where she has to somehow hide the truth without making herself gag or letting the other pony call her bluff.
 
Part of writing good characters (and comedy, coincidentally) is putting characters into situations that highlight their weaknesses. AJ isn’t a beacon of honesty, much like none of her friends are true beacons of their respective elements. No, Applejack is simply so honest that she is a terrible liar. So putting her in scenes where she must somehow convincingly lie or bend the truth creates comedy AND it builds her character. The times where she has been proven wrong or twisted the truth she has later become the better pony and owned up to it.
 
In fact, if it weren’t for her having these weaknesses, her success in being reliable and honest would not nearly be as impressive. It’s one thing to stand up, but it is another thing to get up after one falls.

There was a whole episode about her lying where she worked for a cherry pie maker.
 
She lied to Pinkie about hiding RD in her barn during Party of One.
 
She lied an insane amount of times during Pinkie Apple Pie.
 
She lied about knowing she can handle it in the episode where she took it upon herself to harvest all of the apples in their orchard.
 
That’s to name a FEW of the instances.
 
She lies a lot and that is fact.
