I can think of three possibilities why the card has contractions:
 
  1. It’s entirely possible Ice Pack got a professional card-maker to well, make the card.
     
  2. Might be just a teensy bit cheaper to use a contraction (fewer letters and what-not).
     
  3. Ice Pack might write differently from how he’d speak. For example, I might use a lot of contractions in my speech, but very rarely in my writing.
     
    On another note, I can’t help but feel those testimonials come from somepony I recognise…
