Jade doesn’t really open up to the ponies or their way of life until she accepts her fate. She comes to admit that she got herself into this situation and the longer she stays in Ponyville, the more understands that this is a problem that might not fix itself. So she has to make the best of it. When she finds herself quite fond of the pony way of life, it makes her that much more conflicted.
Jade may have been raised in a dragon family, but since they lived a relatively solitary life, away from other dragons, and since Jade is just a child, she doesn’t know everything about dragons either. Although she knows a lot more about dragons in general, she doesn’t really know what other dragons are like, since she never met them. All she knows is that living among her family had always been kind to her, that she loved her family and that, yes, they were less soft and huggy than the ponies.
When Jade hears ponies talk about dragons, their ignorance and overall disdain just makes her cringe. She has no experience with ponies in that regard, other than them calling dragons brutes when they aren’t talking about Spike or Jade, that is.
So she does stereotype them, but contrary to Spike she is still very open to the pony culture and is willing to comply to learn more about it, even when they unintentionally offend her and even when at first she thinks certain things that ponies do are just plain stupid.
I know you say that her character often is in conflict with Spike’s tendency to stereotype dragons, but would you say she’s similar to Spike in that she stereotypes ponies?
She is also a little girl, but again, one that hasn’t exactly had an easy life. That’s kind of par for course with a dragon living with ponies.
Jade is a dragon, but also a little girl. She’s dismissive of sappiness most of the time, although her reactions aren’t anywhere near as bad as Scootaloo’s. She isn’t a tomboy, she’s just not quite feminine in an equine way. (although she does pick up some pony interests and habits along the way) She knows what she is and presents herself as such: a female dragon.
Jade, like most people, doesn’t like being pulled into hugs by complete strangers, especially when the situation doesn’t call for it. She learned to appreciate the affection from Fluttershy quite quickly. That pony just has that effect on creatures.

I forget if Jade likes this sort of attention or not, want to contribute OP?
That depends of I get headbutted AND told on too
Would it not be worth it?
Even though I’d probably get clawed across my entire upper body
