Your words are correct, but you should not rely on the chart to confirm them, since it represents the ratio of 2 fiat currencies, in a very short period of time.

I always got the impression the Equestrian bits (the coins) were made of a gold alloy. If so, the bit would tend to hold its value much more steadily than our inflation-prone fiat currencies like the ruble or dollar. This would explain the trend in the graph, and would look similar for every other real-world modern currency.
