I think she put the dress on to prove a point (that the hat matches with the dress, up for debate). At least that’s what the caption’s implying.

Poison joke would probably make her smale again, considering it did the same thing to Fluttershy twice.
Maybe that’s the reason she even let Rarity put the dress on her. But, since she’s AJ, even though the poison joke make her care about fashion, she still loves her hat.
And if it isn’t…well, Sweetie Belle can try designing some nice doll clothes for her. Much smaller pony = much less wasted fabric!
