I always thought she used the title to keep herself humble. Like, the needs of the people are more important than hers so she makes her rank one lower to symbolize that?

A queen rules a kingdom, a princess rules a principality. A duchess over a duchy, a baroness over a barony.
 
So, either Equestria is actually a principality, or one of the territories that Celestia rules over is one, and she prefers to use that title. After at least a thousand years, one would expect that her list of titles would take at least a couple of hours to say, with a vast amount to choose from.
 
My personal theory is that Celestia and Luna derive the title of Princess from a pair of principalities in what is now the Everfree forest, around their old castle.

I always figured since it was because she co-ruled with Luna. Equestria can’t have two queens, but there can be lots of Prinesses.

Not like she’s treated as a normal pony anyways.
 
And not being called a queen certainly hasn’t lessened the number of dumbasses who still think she’s an evil tyrant that beats her sister.

I think she does it because she doesn’t want a power overflow with a title like Queen Celestia. That’s why she and Luna stay as princesses. That’s my theory anyway.

Yeah, that’s kind of my point. This whole, “Disney ruined queens for everyone else,” thing is overblown. They’ve got, like, three (more in direct-to-video sequels, to be technical), and two are from the original literary sources, while the third is a parody of the evil queen ideal.
