The key here is, as I think you’re saying, the colloquial use of the term “animal”. As we’ve seen time and again in the show, the ponies consider themselves not animals, but people. And most of us are easily able to see why. The ponies are independent, intelligent, moral creatures. They are essentially humans in pony form.
 
I disagree with you on several points about Sunset, especially her going “native” and not missing Equestria.

I think the rule should be that if you can hold an actual conversation with it, it counts as a person.
 
Because if anyone of another birth species counts as an animal, it would mean that stopping the Dazzlings was wrong of Twilight and everyone else to do, because that’s how sirens feed and their prey is just a bunch of animals. It’d be like someone coming up to you in a restaurant, tossing your food on the floor, and snapping your cell phone in half or something.
 
And why should we not treat Twilight and Sunset as human? Particularly Sunset, who has lived so much of her life as one of them, and shows no signs of missing her “home” or her “real” body. For all intents and purposes, Sunset Shimmer has gone native on the planet of the pastel apes.
 
(Though I have my doubts in terms of Flash so much as giving her the time of day, but that’s because their history would probably ruin it, considering he dated and dumped her before her Rainbow Friendship Exorcism when she was still a complete bitch, and she confirms she was just using him as arm candy at that point, so I’m inclined to think he doesn’t look back fondly on their time together. But that would still mean he’s not into her AS A PERSON.)

This is an obvious equivocation problem. In scientific terms, human beings are themselves part of the animal kingdom. In conventional, everyday terms, the word “animal” refers to any non-person beast.
 
By your silly thinking, any pairing between Spike and Rarity is also “bestiality” because of the inter-species aspect, which is obvious nonsense. As Poptard said, if you’re desperate for some term to use, xenophilia makes sense, but not bestiality.

Regardless of consent, the matter is still one of cross-species attraction, which is something you still have to get past your default-species aesthetics. The matter of the animal’s capacity for consent is secondary to the fact that you are still sexually attracted to an animal, only the question of morality surrounding it. Same as with Spike and Rarity, although Spike is a baby (despite his adult-tier cognitive capacity), so even though he is more likely to be the aggressor (given his behavior), his consent cannot be assumed to be given due to the way the laws work.
 
Also, at no point did I indicate this attraction is disgusting. I only pointed out that it existed. Hell, for all we know, they only like Flash because his appearance met their magically-altered aesthetic priorities from their time as humans, and given their chosen places of residence, Sunset might gradually become more interested in humans (due to immersion) and Twilight will likely return to being interested in ponies (if anything).

I mean, I’d say it does. The whole reason beastiality is frowned upon is because animals can’t give consent. Trying to reduce sentient human beings to beasts so you can call it beastiality escapes the whole point of the word ‘beastiality,’ or at least the reason why it’s something ‘disgusting’ Twilight and Sunset should be ashamed of.
 
At the end of the day, Twilight and Sunset are ‘into’ something there’s no analogous real-world situation for. Except, I guess, being attracted to someone of a different race than you, which I should hope is not something you want to call attention to as gross and disgusting.
